Lamb & Puttanesca Pizza

Pizza Friday has been a tradition in the Real Pasta household for at least 2 years now. If we had a religion, Pizza Friday would be at the centre.

We thought we would share our go-to pizza dough recipe along with one of the easiest and most delicious ways to top it. We really hope you give it a go!


Ingredients:

3 1/2 C plain flour 1 jar Real Pasta Puttanesca sauce

1 3/4 tsp salt 6 lamb cutlets

1 3/4 C warm water Spinach

1 3/4 tsp dry yeast Your fav cheese. Heaps of it.

1 3/4 tsp sugar


Method:

-Combine water, yeast & sugar in a bowl and stand for 5 mins to dissolve the yeast.

-Place flour & salt in a large bowl, add water and mix vigorously with a wooden spoon. When it forms a shaggy dough, get your hands in and knead it for a good 5 mins or so until it forms a smooth dough.

-Oil a large bowl, pop dough inside and cover with glad wrap. Leave in a warm place to rise for 45 mins - 1 hr

-While dough is rising, prepare you lamb. Sear it in a hot pan but don't cook it through as it will be going back in the oven with the pizza & you don't want it to go dry.

-Once dough has risen nicely, gently knock it to release some of the air and divide into 2 or 3 portions, roll out into whatever shape your heart desires.

-Spread generously with puttanesca sauce, spinach, lamb and most importantly cheese.

-Throw in the oven at at least 200c for roughly 15-20 mins.

-If you are like us, you won't wait a second until you cut it and shove it in your gob but, the countless Pizza Friday mouth burn blisters we have had over the years, would recommend you let it cool for a few mins! Then most importantly... ENJOY!


NOTES:

-You can use any kind of lamb you want for this recipe.We wrote cutlets cause they are hella yum and really easy to flash fry. But. You can use lamb chops, fry up some lamb mince or my local New World does these mini lamb roasts that are just the perfect size for this! Really the choice is yours.

-If you don't wanna get your hands dirty, throw the dough together in a stand mixer with the dough hook or in a food processor with a plastic dough blade and let it do it's thing.

-There is no judgement here if you can't be arsed making your own pizza dough!! Just grab a ready to go one from your local bakery or supermarket. The most important thing is that you try a puttanesca pizza, it is seriously divine!
